Chateau Camou is another boutique winery that is helping to chance the perception of Mexican wines. Its intensive vineyard-maintenance techniques and low yields result in superior wines. Surrounded by an otherworld landscape of chaparral and boulders, Camou’s vineyards are based in the French model of dense vine plantings, which allow for deeply concentrated fruit.


Founded in 1985, Camou specializes in classic Bordeaux varietals, including cabernet sauvignon, cab franc and merlot. Camou also produces a small amount of younger wines under the Flor of Guadaluoe label that are features by the glass at such Southwest-style restaurants as Coyote Café in Las Vegas and Santa Fe., and Maya in San Francisco.
