Chateau Camou’s design and architecture reflects the interest in the Mexican culture . The external walls of the winery are built of traditional whitewashed adobe and are a foot-and-a-half thick, designed to insulate the delicate wines against the summer heat and winter cold. The winery’s heavy wooden doors are carved with the classic “river of life”motif found on missions throughout California and Mexico.

Chateau Camou’s winemaker is Victor Torres, who holds a doctorate in enology. Torres became interested in winemaking and fermentation during his studies at the National School of Agriculture near Mexico city, He applied for and received a scholarship from the French government to work on his doctorate in enology at the University of Bordeaux, where he earned certificates in both enology and viticulture.
